Yogurt with Roasted Blueberries

Mixing natural yogurt with these roasted blueberries will never make you want to buy fruit flavored yogurt again, which contains lots of sugar and additives.

Cooked blueberries have greater antioxidant levels as raw ones which is why I started experimenting with various cooking methods. Roasting blueberries develops a delicious rich and sweet flavor. I added some tasty superfood toppings.

For optimal health benefits try and find 100% grass-fed yogurt which comes from cows who have grazed in a pasture. Grass-fed yogurt is richer in the beneficial omega-3 fats and CLA. I oftentimes had difficulties finding 100% grass fed yogurt so I started making my own. It is very easy to make- see post about homemade yogurt.

Yogurt with Roasted Blueberries

Yield: Serves 2
time: 25 minutes

Ingredients:

1 cup blueberries
1 1/2 tsp honey
2 cups plain yogurt
Toppings:
1/2 banana, cut into half the long way and then slice
1 tbs cacao nibs
2 tbs almonds

Directions:

1. Preheat oven to 320 degrees.
2. Use a strainer with a fine mesh or line a colander with cheese cloth and pour the yogurt into it. If you want to keep the whey (the yellowish liquid that strains from the yogurt), place a bowl under the colander. I like using whey for soaking grains- see post the benefits of soaking grains.
2. Coat blueberries with honey and spread out on a baking sheet. Cook in the oven for 20 minutes.
3. Pour the yogurt into a bowl. Stir the roasted blueberries into the yogurt. Add toppings.
