Homemade Chocolate

This chocolate recipe is a staple at our house- a healthy treat that the whole family enjoys. The base recipe always stays the same – the only thing I change around are the dried fruits and type of nuts – my favorite combination is goji berries with almonds. The type of cacao bean you use makes a big difference in the taste of the chocolate. I experiment with different beans and do chocolate tastings for my kids, showing them where each bean was harvested and telling them a bit about the country. Some of the ingredients may be difficult to find at your local supermarket- I like the cacao butter from www.tisano.com. Goji berries, raw cacao, cacao butter and carob powder can also be ordered online at www.sunfood.com or www.navitasnaturals.com.

Time: 15 minutes plus at least 2 hours chilling time to set
Yield: 1 large chocolate bar

6 tbsp ground raw cacao
2 tbsp carob powder
3 tbsp cacao butter
2 tbsp coconut oil
2 tsp maple sugar or other sweetener of your choice
Dash vanilla extract
Pinch of himalayan sea salt
1 tbsp dried berries
2 tbsp chopped nuts

1. Melt cacao butter and coconut oil over low heat.
2. Combine all dry ingredients. Add melted butter.
3. Pour into chocolate mold. Place in freezer to set for at least 2 hours.
4. Take it out of the molds and wrap in parchment paper. Store in the freezer.
