Soaking Your Grains

I always have something soaking on my table. Soaked grains and legumes are easier to digest and the vitamins and minerals are better absorbed by the body.

Cover grains with water and add 1 tablespoon of acidic medium (#whey, lemon juice, vinegar, buttermilk, yogurt, or kefir). Soak for 12-24 hours at room temperature.
